Our favorite Chocolate Chip Cookie recipe (thanks to my sis, Lisa)
Chocolate Chippers ¾ c. shortening 1 tsp. soda 1 c. sugar 1 ½ tsp. salt ½ c. brown sugar 1-6 oz. pkg. choc. chips 2 eggs 1 c. nuts (optional) 2 tsp. vanilla 2-2 ½ c. sifted flour Cream shortening, sugars, eggs, and vanilla til fluffy (do not use electric mixer). Sift together dry ingredients. Stir into creamed mixture. Stir in choc. bits and nuts. Drop onto greased cookie sheet. Bake at 350 for 10-12 min. |
Apple Brine
2 qts. apple juice
1 lb. brown sugar
1 c. kosher salt
3 c. water
3 oranges, quartered
4 ozs. fresh ginger, thinly sliced
15 whole cloves
6 bay leaves
6 garlic cloves crushed
1. Bring apple juice, sugar and salt to a boil over high heat, skim foam, cool to room temperature.
2. Add remaining ingredients.
3. Brine turkey for 24 hrs.
*Quantity is sufficient for a 14 lb. turkey
2 qts. apple juice

3 c. water
3 oranges, quartered
4 ozs. fresh ginger, thinly sliced
15 whole cloves
6 bay leaves
6 garlic cloves crushed

Gramma's Frozen Sweet Corn
1 gal. cut sweet corn (16 c.)
1 pint water (2 c.)
1/2 c. sugar
1 stick oleo or 1/2 c. Mazola corn oil (we prefer the Mazola)
salt to taste
Bring all to boil stirring constantly to avoid burning-any burnt corn ruins the whole batch-ask me, I know! Simmer, uncovered for 10 minutes. Cool, package, and freeze. (You should definitely "taste test" it too!)
Hint-don't cut kernels too deep. After 'de-kerneling', scrape cobs lightly to get the good stuff-the juice and creamy base-into the pan with the kernels.

4 ingredient muffins and oh, so easy! They might look a bit funny with those chocolate chips sticking outta them but what they lack for looks they make up in taste! Moist, delicious! Here's my recipe (I call 'em "Amanda's muffins" cuz I got the recipe from Amanda!!)...
1 can pumpkin (15 oz.)...NOT pumpkin pie MIX but just pumpkin
1 cup water (this can be scaled down or eliminated completely but the batter is pretty thick without it)
1 cake mix (any flavor-be creative!)
Chocolate chips or cinnamon chips (or whatever delicious little chips you have!)
Mix all together (by hand or with mixer). Put in muffin pans (paper lined or well greased pans). Bake at 350 degrees, 20-25 min. (for regular sized muffins) or til well set.

Potato Ham Chowder | |

Cheeseburger soup and potato soup have both been main staples at many of our family gatherings. When I took the cheeseburger soup to a church soup supper there were some doubtful looks in those sweet little ol ladies' eyes but when they tasted it...that all changed! I overheard "Who brought that?" "What kind is it?" "It's CHEESEBURGER soup!!" Then later I was asked, "Are you bringing that soup again?!" :) My favorite steps in the recipe are sauteing the onions, carrots, celery, basil and parsley together in sizzling butter and then stirring in the cheese, milk and sour cream at the end! The potato soup has been a long time favorite and the kids don't like it when I try to change it up!
